Abstract

Peach fruit (Prunus persica) have a short shelf life, their metabolic activity is affected by the presence of mechanical damage; the physical damage can be caused by impact or vibration during transportation and postharvest handling, causing losses of up to 40%. In the present work was designed, fabricated and evaluated a simulation prototype of dynamic stress in two peach varieties (Paquime and Oro from Tlaxcala), at different stages of ripening and different loads were applied (Paquime control, 50 and 14 kg; Oro control, 100 and 50 kg). Weight loss, firmness, total soluble solids, color and respiration using continuous air flow method dynamic, were measured. Explaining with nonlinear regression models the firmness and total soluble solids parameters, their behavior is in function of the load. Color showed significant differences (Tukey, α= 0.05) between varieties and treatments of different varieties to the saturation index and hue angle. Respiration decreased on its growth rate versus time.
